A Cabernet Sauvignon that faces the sea, set on a south-west slope and lit from dawn to dusk. Deep in colour and in substance, it weaves together wild berries, blackberry, chilli and clove, with a full mouthfeel poised between tannin and acidity.

Vineyard and work

The Cabernet vines look out over the sea and catch the sun all day long. The clay soils, rich in fine skeletal stone, schist, galestro and sandstone, give the wine depth and structure.

Work in the vineyard follows the conditions of each vintage: cover crops on alternate rows, the 500 and 501 field preparations, propolis, horsetail and nettle macerates, copper and sulphur only in the amounts truly needed.

Winemaking and profile

The parcels of the old seaside vineyard and the new seaside vineyard are harvested and vinified separately, following their staggered ripening. Fermentation is spontaneous in open 1,000 kg tubs, with manual pump-overs and punch-downs.

The lots are then blended and aged for 8 months in a 16.5 hl cask, then racked into concrete for a further 8 months. After 12 months in bottle, the wine shows a full body, balanced tannins and a spiced depth.
