Vineyard and practices
The grapes come from the estate's various vineyards, in particular from the younger or more generous parcels. The harvest is done by hand and follows the ripening of each individual micro-parcel.
In the vineyard we work with cover crops on alternate rows, field preparations 500 and 501, propolis and macerations of horsetail and nettle. Copper and sulphur are used only in the amounts needed, while the canopy is managed according to the weather of the season.
Winemaking and profile
Each micro-parcel ferments separately in 1-tonne open vats. The lots are then blended in concrete, where they go through malolactic fermentation.
Ageing continues for 6 months in glass-lined concrete tanks, followed by a period of rest in bottle. The result is a fresh, balsamic, easy-going red, ready to pair effortlessly with many dishes.
