A taut, Mediterranean Vermentino, born among the scrub, the clay soils and the sea air. It opens on white fruit, chamomile, thyme and acacia honey; on the palate it is fresh, electric and enveloping, with a saline finish that stays clean sip after sip.

Viticulture and soil
The vineyard is farmed organically, with cover crops and field preparations applied to both soil and vine. The aim is to keep the ground alive and encourage the exchange between the deeper layers and those nearer the surface.
The roots play a central part: the finer their network, the more they meet the mineral components of the soil. Propolis, horsetail, copper and sulphur are used only in the amounts needed, according to the vintage.
The current challenges of a changing climate raise new questions too, pushing us to look for fresh balances, season after season.
Winemaking and profile
The north-facing parcel, with the oldest vines, is harvested and fermented on its skins in a Tava amphora. The fruit from the younger vines undergoes a short maceration instead, then ages in glass-lined concrete.
The two lots are blended before bottling. The result is a straw-yellow white with golden glints, fresh and persistent, carried by a Mediterranean salinity that follows the wine right through to the finish.
